6 -8 servings
1 block firm tofu, well drained and cubed
1 large, canned, chipotle pepper, deseeded and finely minced
1-2 Tbs adobo sauce from the chipotle pepper can
2-3 Tbs vegetable oil
1 small to medium sized onion rough chopped (approx. 1 - 1 1/2 cups)
1 large red pepper, deseeded and rough chopped (or any Bell pepper)
2 medium carrots, peeled and cut into 1/2-inch coins
2 large cloves garlic, minced
1 cup fresh or frozen corn
1 tsp ground cumin
1 tsp dried oregano
3 Tbs chili powder
one 15-ounce can diced or stewed tomatoes (see hints below)
three 15-ounce cans black beans (see hints below)
approx. 1 1/2 - 2 cups vegetable broth
chopped fresh cilantro as garnish (optional)
grated cheddar cheese as garnish (optional)
Deseed and finely mince one large chipotle pepper and add that to a bowl with one well drained, cubed, firm block of tofu and add a spoonful of the adobo sauce and toss to combine.
Next, add a splash of vegetable oil to a heavy bottomed soup pot and add about 1 cup rough chopped onion, 1 large deseeded and rough chopped red pepper and 2 medium peeled, 1/2-inch thick sliced carrots and cook those along to soften up a bit.
Once the onion is translucent add 2 large minced cloves of garlic and about 1 cup of fresh or frozen corn and stir that around and cook it along a minute.
Then add 1 tsp ground cumin, 1 tsp dried oregano and 3 Tbs chili powder, one 15-ounce can diced or stewed tomatoes and three 15-ounce cans of black beans.
And then add just enough vegetable broth to give it a somewhat thin chili consistency.
Turn the heat up on that and then adjust the heat so it's going along at a nice steady simmer for 20 minutes or so to thicken up a bit.
At that point, add the marinated tofu and let that warm through and serve with chopped fresh cilantro.
Chipotle peppers are smoked jalapeno peppers and you can buy them canned in a vinegary adobo sauce.
Once the tofu is marinating, cut all of the vegetables before you begin cooking the chili.
For the healthiest version, use no salt added canned tomatoes and low sodium black beans.
